    Green Tea Cake with red bean pastes topped with cream cheese frosting and jam

    Experimenting with exciting new recipes gives us a buzz at Kenko Tea, and we’re delighted to share our latest favourite with you: Matcha Red Bean Cake + Cream Cheese Frosting by Sydni Ng aka @mybakingbucketlist.

    This super easy dessert combines the bittersweet flavours of matcha with the sweetness and creaminess of red bean paste and cream cheese frosting.

    There is an overnight element to this recipe - but it’s so delicious and simple to make it’s worth waiting for.

    Matcha Cake with Red Bean Paste

    Red Bean Paste

    - 1 hour cook time | 30 mins prep time -

    Ingredients
    • 200 g red beans, washed & rinsed
    • Water
    • 50 grams sugar
    Method
    1. Fill the pot of red beans with water up to 1 inch above the beans
    2. Boil on high heat, then turn to low once it boils
    3. Continue cooking till the beans are soft (about 1h)
    4. Stir frequently to prevent beans from sticking to the bottom & add more water to cover the beans
    5. Remove from heat and stir in sugar once the beans are soft
    6. Let it cool down slightly for an hour
    7. Blend till smooth & refrigerate overnight

    Cream Cheese Frosting

    Ingredients
    • 250g cream cheese, room temperature
    • 250g butter, room temperature
    • 60g icing sugar
    • 1/4 tsp vanilla extract
    Method
    1. Whip cream cheese and butter till combined
    2. Add icing sugar and vanilla extract, scrape down the sides
    3. Continue whipping and scrapping down the sides for 2 more times

    Matcha Cake (10-in W + 1-in Hl)

    - 30 mins prep | 40 mins bake time -

    Ingredients
    • 4 eggs, separated
    • 140g sugar
    • 115g plain flour
    • 20g corn flour
    • 12g matcha powder
    • 40g butter
    • 70 ml milk

      Method
      1. Whip the egg whites on high speed till light and fluffy
      2. Add in half the sugar, & continue whipping till combined
      3. Repeat with remaining sugar
      4. Add in egg yolks, & whip till combined
      5. Sift plain flour, corn flour and matcha powder in a separate bowl, & mix well
      6. Fold dry ingredients into the egg mixture **Do NOT overmix**
      7. Melt butter with milk over a bowl of hot water 
      8. Preheat oven to 170 C
      9. Fold 1/4 of the butter mixture into the the batter
      10. Repeat with remaining butter mixture
      11. Bake the batter in a baking pan lined with baking paper for 30-40mins
      12. Let it cool before slicing into half
      13. Top with bean pastes & cream cheese frosting on both halves
      14. Stack them on top of each other & Enjoy!
