Vegan Raw coconut matcha green tea ice cream

It’s getting hot here in Vietnam and I’m sure the temperature is rising in Australia too as Christmas approaches. And what better treat to eat in the heat than a delicious bowl of ice-cream? To satisfy those ice cream cravings, today we have a Matcha Green Tea Powder Coconut Ice cream Recipe by Tess Begg from @tessbegg.

This green tea ice cream recipe is a lot healthier than what you’ll find at your local supermarket. It’s vegan, raw, dairy-free and sugar-free. But that doesn’t mean it isn’t creamy, rich and full of flavour – the coconut and green tea matcha flavours take care of that.

Oh, and there’s also mint chocolate inside the ice cream too… delish!

Matcha Vegan Coconut Ice Cream Recipe

Ingredients

  • 400ml can coconut cream
  • 1 cup overnight refrigerated coconut cream
  • ¼ cup coconut nectar
  • 1-2 tbsp Kenko green tea powder (more if you want stronger taste)
  • ¼ cup almond milk
  • ⅓ cup coconut sugar
  • ⅓ cup chocolate mint chunks

Method

  1. Pour out the coconut liquid from can and set aside
  2. Scoop out the coconut cream into the bowl
  3. Add the refrigerated cream into the bowl
  4. Beat the cream until thick and creamy
  5. Add coconut nectar, matcha powder, almond milk, and coconut sugar
  6. Beat until combined
  7. Stir in the choc mint chunks
  8. Pour into tin lined with baking paper
  9. Cover with plastic foil
  10. Freeze for 6+ hours and serve chilled
