    We love pasta, we love pesto and we love matcha. Put them all together and you get a classic Italian dish with a Japanese twist that’s perfect for lunch or dinner.

    Anyways, that’s enough of my talking. Let’s start cooking!

    Vegan Matcha Pesto Pasta

    Ingredients

    • ½ cup walnuts
    • ⅓ cup pine nuts
    • 1 cup basil leaves
    • ½ cup spinach leaves
    • 2 tbsp lemon juice
    • Pinch of pink salt
    • 2 tsp matcha powder
    • Garlic, Olive oil, avocado
    • Your choice of pasta: Penne, Spaghetti, etc.

    Method

    1. Blend all ingredients, except the last two, until combined
    2. Add water if needed to blend more thoroughly
    3. Spice up the flavor for the pesto with garlic, olive oil and/or avocado
    4. Boil the pasta until cooked
    5. Toss pasta with the pesto sauce
    6. Add some salt if needed
    7. Garnish with chopped spinach or your choice of topping
