Matcha Aqua Faba filled Raspberry Jam Sponge Cupcakes

If you're looking for an alternative to dairy, egg and refined sugar-based desserts, a can of aqua faba is just the ticket! This recipe is the perfect dish for vegan dessert first timers, because it’s so delicious and will help you want to make the switch to vegan desserts for life.

Put simply, aqua faba is the name for the brine of beans or other legumes, typically chickpeas. This liquid is a perfect egg white substitute and has a unique mix of carbohydrates (fiber and starches), proteins, and other soluble plant solids. It has emulsifying, foaming, binding, gelatinizing and thickening properties, just like egg white.

Many ingenious vegan dessert recipes have incorporated aqua faba as an egg white substitute, with tasty results. And this week’s recipe, Vegan Vanilla Matcha Sponge Cake by the fabulous and cheerful Handara Slok aka @rawclates, is a perfect example of aqua faba put to good use.
