This liquid is a perfect egg white substitute and has a unique mix of carbohydrates (fiber and starches), proteins, and other soluble plant solids. It has emulsifying, foaming, binding, gelatinizing and thickening properties, just like egg white.

Matcha Aqua Faba filled Raspberry Jam Cupcake

Ingredients

  • 1 tsp apple cider vinegar
  • ½  tsp cream of tartar
  • ½ cup Aqua Faba (chickpea brine)
  • ½ cup organic sugar or coconut powdered sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • 3 Tbsp Kento Tea matcha powder
  • A pinch of sea salt
  • Some raspberry jam

Method

  1. In a clean bowl, mix the aqua faba, cider vinegar and cream of tartar on high speed.
  2. Slowly whisk in the sugar to the aqua faba mix until smooth and stiff.
  3. In a separate bowl, mix the flour, baking powder, matcha, salt and vanilla together.
  4. Fold the aqua faba into the flour mixture.
  5. Pour the batter into cupcake molds lined with cupcake liners
  6. Bake in a preheated oven at 350C for 30 minutes.
  7. Remove the tray from the oven and let the cupcakes cool on a rack.
  8. Once cooled, cut out the center of the cakes and fill them with raspberry jam.
  9. Top the cupcakes with vegan frosting or whipped cream.
