Matcha Green Tea No-bake Cheesecake

Cheesecake, one of the world’s most loved desserts, is simply pure bliss.

We all know cheesecakes come in different flavours and a matcha version has been universally embraced by matcha lovers worldwide. The unique grassy and bittersweet taste of matcha is just right for a rich and creamy cheesecake.

And this week’s recipe is what everyone is waiting for - a Raw Matcha Cheesecake recipe by the lovely Kami from @imaka7.

Oven-free Matcha Green Tea Cheesecake is a perfect after-dinner dessert for your family

Kami is a matcha-obsessed Berliner. With a huge love for this magical green powder, she has the tendency to add matcha to almost everything she bakes. Besides from her love of sweet treats, Kami also enjoys playing board games with her loved ones.

Kami’s Green Tea Cheesecake has two matcha layers. The crust is infused with matcha green tea, creating a beautiful dark green colour at the base. The matcha cream cheese filling creates a lighter green colour which contrasts with the base.

The recipe is oven-free so there’s no excuse not to make this luscious and decadent matcha cheesecake.

No-bake Matcha Green Tea Cheesecake

Ingredients

Graham cracker base

  • 150g graham crackers
  • 75g unsalted butter, melted
  • 2 tsp matcha powder
  • Optional: ½ tsp cinnamon

Filling

  • 450g cream cheese
  • 400ml whipping cream
  • 60g sugar
  • 4 tsp matcha powder
  • 1 lemon
  • 6 gelatin sheets (~ 2 tsp powdered gelatin)
  • 250ml cold water
  • Extra matcha powder for dusting

Tools: 8 or 9” springform pan, food processor, electric mixer

Method

  1. Crumble the graham crackers until finely crushed.
  2. Mix the crumbs with butter, matcha and cinnamon in a food processor.
  3. Transfer the mixture into the springform pan, pressing it tightly to the bottom.
  4. Chill in the fridge while preparing the filling.
  5. Beat the cream cheese with the electric mixer until smooth.
  6. Fold the matcha and sugar into the mixture with a spatula.
  7. Mix in whipping cream and lemon juice until smooth.
  8. Soak the gelatin sheets in a bowl of cold water for 5 minutes.
  9. Microwave the bowl of gelatin at medium heat (~400W) for 40 seconds.
  10. If you use gelatin powder, mix it with 50ml of cold water, before microwaving it for 30 seconds.
  11. Add the gelatin sheet to the filling, mixing it with the electric mixer.
  12. Pour the filling on top of the base, smoothing out the surface
  13. Chill until set, for four hours or overnight.
  14. Remove the cake from the springform pan
  15. Dust extra matcha powder on top before serving.
