So the new recipe for us to try out this week is Matcha Green Tea Vegan Doughnuts by the lovely Elisa Menchetti!

These doughnuts are vegan and very healthy for a breakfast or snack. The recipe is gluten free, refined sugar free and packed full of antioxidants from matcha green tea. They are baked instead of fried, so it’s a much more healthy version of your typical doughnuts. You will definitely enjoy your breakfast with these lovely green, healthy and tasty doughnuts.

Vegan Matcha Green Tea Doughnuts


  • 100g rice flour
  • 50g brown sugar
  • 5g matcha (feel free to increase the amount to your preference)
  • 100ml coconut milk


  1. Preheat the oven to 180C and grease the doughnut pan with coconut oil
  2. Combine all the dry ingredients until well mixed
  3. Mix in the coconut milk until combined and a soft dough has formed
  4. Scoop the batter into the prepared doughnut pan
  5. Bake for 10 minutes, then remove from the oven to cool down
  6. Top with your favourite icing and fruits
