Halloween Matcha Pancakes + Blackberry Sauce

Matcha Vegan Pancakes served with Blackberry Spirulina Sauce for the spookalicous Halloween!

There is no trick with Jo’s Halloween Pancakes as they are plant-based, gluten-free and refined sugar-free. The matcha gives the recipe a nice and mildly sweet flavour, which pairs well with the delicious blackberry spirulina sauce.

These pancakes will undoubtedly bring the fun and appropriate spookiness for your Halloween!

Halloween Matcha Pancakes + Blackberry Spirulina Sauce

(Serves 1-2)

Ingredients

Matcha Pancakes

  • 125g Orgran Buckwheat Pancake mix
  • 1/2 banana sliced
  • 1/2 cup almond cashew milk, unsweetened
  • 1 Tbsp coconut sugar
  • 1 tsp Kenko Tea matcha powder
  • Large handful baby spinach leaves

Blackberry Spirulina Sauce

  • 3/4 cup frozen blackberries
  • 1 tsp tropical spirulina powder
  • 1/2 tsp granulated stevia
  • Sugar-free pancake syrup
  • A little bit of water

Instructions

  1. Blend all the pancakes ingredients until thick and smooth
  2. Dollop the batter on a non-stick pan greased with coconut oil
  3. Cook both sides until golden then stack on plate
  4. Blend all sauce ingredients until smooth
  5. Add more water as needed to adjust the consistency.
  6. Serve the pancakes with the sauces and fresh blackberries.
