Today at Kenko Tea we’re excited to bring you an interview with a special guest, a super popular food blogger who is also a massive matcha fan herself - Jee Choe, aka @ohhowcivilized!

Jee Choe is the creator of the New York based food blog, Oh, How Civilized, who loves refined experiences.  Her work focuses on afternoon tea and includes lots of recipes for matcha:

Jee Choe is here to share a bit about herself and also tell us about a stunning matcha dessert: Matchamisu or Matcha Tiramisu!


  1. Hi Jee. What had sparked your interest to get into food blogging and recipe development?

I started the blog as a place to put notes and photos of afternoon tea spots in NYC for friends who would ask for afternoon tea recommendations. Then I started experimenting with tea sandwiches and easy tea/matcha based recipes.

From there, I partnered with my friend Queenie, a culinary school graduate, who develops all the matcha recipes on the blog that require an oven. I assemble -- she bakes :).

  1. Any particular place you get inspiration for your recipes?

It can be from anywhere from a local bakery to online on pinterest.

  1. Do you have a favourite matcha recipe?

It has to be the Matchamisu = Matcha + Tiramisu. Queenie came up with the brilliant name and it was one of our first collaborations.

I remember I couldn't stop eating cup after cup (they're so good!) and was up until 4 A.M trying to go to sleep with all that caffeine in my system :P.

  1. Being from NYC, what are your thoughts & observations on the massive growth of Matcha in NYC over the last year? Where do you think matcha's popularity is headed there?

I love that new matcha places are popping up all over NYC! Now I have a few options if I want a matcha latte. I can see matcha branching out beyond beverages and being used as an ingredient in sweet or savory dishes.

Green Tea Tiramisu



Matcha Syrup

  • 3/4 cup water
  • 1/2 cup sugar
  • 1 tbsp matcha

Matcha Sponge Cake

  • 4 eggs
  • 7 tbsp sugar  
  • 3/4 cup all-purpose flour
  • 1 1/2 tbsp matcha
  • Confectioner's sugar for dusting

Matcha Cream

  • 2 egg yolks
  • 1 tbsp sugar
  • 1 tbsp rum
  • 2/3 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1 tbsp matcha + more for dusting
