Vegan matcha vanilla cake with no baked, raw, egg free, dairy free, sugar free recipe

Today we bring you the mouth watering Raw Matcha Vanilla Vegan Cake by the super talented Paris – a vegan food blogger from Sydney. Paris believes healthy eating is for everyone, young and old, and who works hard to inspire people to ditch the junk food and eat clean.

This Raw Matcha Vanilla Vegan Cake ticks all the boxes. It’s a vegan, dairy free, sugar free, egg free and no-bake recipe that’s totally delicious!

It has two layers - matcha and vanilla – that go together perfectly, creating a smooth, yummy taste. There is some preparation involved like soaking cashews and also freezing layers overnight – but it’s worth the wait!

So, let’s get mixing…

Raw Matcha Vanilla Vegan Cake

Ingredients

Base

  • 2 cups pitted medjool dates (soaked)
  • 1 cup assorted nuts of choice (raw)
  • 2-3 tbsp of raw oats (if needed for dryness)
  • 2 tbsp maple syrup
  • 1 tsp raw cacao/carob powder
  • 1 tbsp raw shredded/dessicated coconut

Vanilla white layer

  • 1-2 cups raw soaked cashews (minimum 4 hours soaking time)
  • 1/2 can of coconut milk
  • 2 tbsp maple syrup
  • Vanilla powder/essence to taste

Matcha green layer

  • 1-2 cups raw soaked cashews (minimum 4 hours soaking time)
  • 1/2 can of coconut milk
  • 2 tbsp maple syrup
  • 1 heaped tbsp matcha powder (using Kenko Tea)

Method

  1. Process base ingredients until well combined and crumbly
  2. Press into a lined pan and freeze for minimum 15 mins
  3. Blend 'white layer' ingredients until reaching a smooth and whippable consistency
  4. Pour over base and freeze till set (overnight is best)
  5. Blend 'green layer' ingredients until smooth and whipped
  6. Pour on ‘white layer’ and freeze again overnight to finish!
