Muesli has been grabbing our attention lately as a new food option for a healthy diet. Invented by the Swiss, this breakfast staple is very similar to granola but has more more raw ingredients and contains far less sugar.

Muesli can be served plain or lightly toasted – much healthier compared to granola, which is baked with oil and sugar.

There are many different things you can make with muesli, including smoothies, cookies, slices, muesli bars or simply breakfast muesli. There are tonnes of amazing muesli creations on social media, from instagram or pinterest!

These Matcha Muesli Bars are healthy, vegan, gluten free and amazingly delicious.

You’ll love the ingenious combination of nuts, dried fruits, coconut, chocolate, caramel and a hint of matcha green tea -  a perfect snack for breakfast or when you’re at work.

Matcha Green Tea Caramel Choc Muesli Bars

Ingredients

Ingredients for matcha choc caramel muesli bars recipe

Muesli bars
  • 2 cups oats
  • 2 tbsp tahini
  • 3 tbsp rice malt syrup / maple syrup
  • 1 tbsp coconut oil
  • 1 tsp Kenko Matcha powder
  • Mix of puffed cereal, grains, nuts, seeds (for your muesli base)
  • Dried fruit
Toppings
  • 1 tbsp tahini
  • 1 tbsp rice malt syrup / maple syrup
  • 1 tbsp coconut milk
  • Coconut shreds
  • Vegan chocolate (melted)
  • Crushed almonds

Methods

  1. Bake oats for 10 mins until golden and have a nutty aroma
  2. Stir well melted coconut oil, rice malt syrup and tahini
  3. Combine oats, mixed puffed cereal, dried fruits, and matcha powder
  4. Add the oil/syrup mixture, stir well
  5. Optional: add 1 tbsp coconut shreds
  6. Press firmly mixture into a baking tray
  7. Place in the freezer for 20 mins
  8. Mix tahini, maple syrup and coconut for caramel topping
  9. Spread evenly on muesli base
  10. Place in the freezer for another 20 mins
  11. Spread the melted vegan chocolate on top of caramel topping
  12. Garnish with crushed almonds and coconut shreds
  13. Place in the freezer for 20 mins
  14. Cut into sections to serve
