Matcha Ice cream Sandwich Recipe

I remember as a kid reaching into the oversized freezers at the local milk bar choosing an ice cream to eat. One particularly fond memory was the Maxibon. It was half chocolate covered, half Ice cream sandwich and for a 10 year old it was 100% delicious - I wanted to to eat them all the time.

I never got my dream of eating them everyday - but always wondered how an ice cream sandwich was made. Luckily we have such an awesome community here at Kenko Tea and today is my (and your) lucky day. We have a Matcha Ice Cream Sandwich Recipe! that is vegan, healthy and oh so delicious!

Ok, now to the recipe and the video for this AWESOME matcha cookie ice cream sandwich!

Matcha Ice Cream Sandwich + Matcha Choc Cookies



  • 1.75 cups self raising flour
  • 2-3 tbs matcha
  • 1/2 cup syrup (I used rice malt syrup)
  • 1/2 cup caster sugar
  • 5-6 tbs vegan butter (I used Nuttelex)
  • 1/2 cup choc chips (or more if you'd like)
  • 1 flax egg*
  • Dash of soy milk (optional)

*Flax Egg:

  • 1 tbs grounded flax seed (simply food process/blend/pulse flax seeds)
  • 2.5 tbs water


  • 5-6 frozen bananas overnight



  1. Preheat oven to 180 degrees Celcius, and line a pan with baking paper.
  2. Mix all the wet ingredients: butter, syrup, sugar, flax egg - thoroughly combined.
  3. Mix all the dry ingredients: self raising flour, matcha powder - thoroughly combined.
  4. Make a well in the centre of the dry ingredients, and add the wet ingredients. Stir thorughly until you end up with a cookie dough consistency - not too wet, not too dry, but combined. Add soy milk if the mixture is too dry, and flour if too wet.
  5. Roll mixture into desired shape, and bake for 20-25 minutes.


  1. Freeze bananas overnight (longer for a more ice cream consistency - I usually freeze them for 1.5 days!)
  2. Food process bananas, making sure to scoop down the ends now and then, until you end up with an ice cream consistency.

Put them together and you have yourself matcha cookies ice cream sandwich!
