I’ve honestly never eaten muesli – me Vietnamese start the day with Pho, a delicious and healthy beef noodle soup loaded with herbs.

But the growing popularity of muesli, especially on instagrams lately, is tempting me to give it a try. And today’s recipe - Banana Nice Cream with Matcha muesli from the amazing Naturally Nina – is right at the top of my breakfast to eat list.

This muesli recipe ticks all the right boxes: vegan, raw, sugar and dairy free, quick and easy to make and oh so TASTY looking!

Matcha Muesli Banana Nice Cream + Strawberry & Mango


  • 4 frozen fresh bananas
  • 1 large handful frozen fresh mango
  • 1 heaped tsp of organic matcha powder
  • 1 cup of your favorite liquid (e.g. rice milk, soy milk, or coconut water)


  • Put all the ingredients in a high powered blender
  • Blend the mixture until smooth and creamy (you may need to stop halfway through to scrape down the sides).
  • Scoop the creamy yummy mixture into a bowl
  • Top it with all your favourite toppings, like fresh berries, mango, fresh mint leaves, a handful of granola and some shredded coconut!
